1. Dinner. Holy #$%&! If you are a vegan and LOVE mac & cheese and miss it as much as I do… your life will never be the same.

    This is how I made it: 1 cup almond milk (I used trader joes original flavor), 3.5 Tb Earth Balance, 1.5 cups Daiya all natural cheddar flavor “cheese”.

    In a sauce pan on med heat melt earth balance in almond milk. Once melted, add Daiya then and in garlic salt & pepper to taste. Stir until melted and creamy (you may have to turn heat up a bit, but be careful not to burn it).

    Add in your favorite cooked pasta (I used whole wheat twists) & peas… mix together & eat it up!
